Emmentaler is a hard type of cheese made using a specific method, where the heat-treated cow’s milk is used to combine two successive fermentation processes; the lactic fermentation is followed by a propionic fermentation.


Ingredients : Heat-treated milk with at least 60% dry matter and at least 45% m.f. in the dry matter.
